Nothing says comfort like warm apple pie

Nothing says comfort like warm apple pie. While it is very tasty at any time of the day, it doesn’t make for a nutritious breakfast. If you love apples and need to feed a family (or want to make a week’s worth of breakfast ahead of time to simplify busy mornings),try this apple cinnamon steel-cut oatmeal. Its crunchier texture makes for a hearty start to the morning. Be sure to add a glass of milk for a protein boost.

Apple pie steel-cut oats

6 cups water (or per instructions on oats)
1/2 teaspoon salt
2 cups steel-cut oats
2 apples, cut into ½-inch pieces
2 to 3 teaspoons cinnamon
½ cup sliced almonds
1/2 cup skim milk

Bring water and salt to a boil in a deep pot and add oats, apples and cinnamon. Reduce to a simmer and cook 30 minutes or until the oats are the desired consistency. While still warm, stir in almonds and milk.

The oatmeal may be kept covered in the refrigerator for up to five days and reheated.

Makes 6 servings. Per serving: 251 calories, 7.5 g fat, 1.1g saturated fat, 1.6 mg cholesterol, 210 mg sodium, 38 g carbohydrates, 7.4 g fiber, 9.5 g protein
