Try this recipe!
- 4 chicken breasts
- 2 cups uncooked long-grain rice (organic if possible)
- 3 cups chicken stock
- 1 cup water
- 1 lemon
- 1 bunch of your favorite fresh herbs
- Salt and pepper to taste
Preheat oven to 350 degrees. Put rice, chicken stock and water in a steep-sided baking pan and season with salt and pepper. Top with chicken breasts, juice of one lemon, fresh herbs and salt and pepper. Bake for 1 hour, or until rice and chicken are fully cooked.
