Eating a balanced breakfast is an important part of a healthy diet. When you start your day by eating right, you are giving your body the fuel it needs to power up. You are also kick-starting your metabolism, which can help you burn more calories throughout your day.

On the flip side, skipping breakfast can leave you feeling tired and hungry. That’s when you are more likely to go for that donut during your 9 o’clock meeting or zip through the drive-thru while you’re out running errands. However, making smart choices in the morning can be difficult while you are rushing to get out the door. Preparing your breakfast in advance can allow you to eat right without spending a lot of time in the morning. Try this recipe for a powerful start to your day!

Power Muffins
Makes up to 6 servings; 2 muffins per serving

Start with:
9 eggs
1 cup nonfat or low-fat milk
Optional ingredients: spinach, turkey sausage, cheese, peppers, onions, mushrooms, salt and pepper

Preheat oven to 400° F. Crack the eggs into a large mixing bowl. Add in the milk and stir. Add any optional ingredients to taste, and stir to combine. Spray a muffin pan with cooking spray or use a nonstick muffin pan. Fill the muffin pan with the mixture. Bake for 20 to 25 minutes or until golden brown.

Your power muffins will stay fresh in the refrigerator for about five days. Reheat muffins in the microwave for about 1½ minutes.
