Hearty Autumn Stew

Sweet potato, collard green and chicken stew

It can be confusing making sense of foods labeled “all natural”, “100 percent natural”, “organic” – the list goes on. What does make sense is that most of us know we feel better when we eat well. We also know foods that are free from preservatives, additives, chemicals, hormones, etc., are better for us. So it’s best not to get hung up on the terminology. Instead, look at the ingredients list and stick with whole, naturally grown foods. According to the Centers for Disease Control and Prevention, high-quality, nutritious food plays a major role in preventing common chronic diseases like cancer, diabetes, heart disease and arthritis.

While you’re shopping for nutritious food this weekend, consider adding the ingredients for this hearty stew to your shopping list.

Sweet potato, collard green and chicken stew

2 cups uncooked chicken, cut into pieces
3 sweet potatoes, peeled and diced
1 bunch collard greens, chopped
1 yellow onion, chopped
4 cups chicken stock
2 cups water
2 tablespoons olive oil
Salt, pepper and cayenne to taste

In a stock pot, heat olive oil and sauté onion until lightly browned. Add sweet potato, collard greens, chicken stock, water and seasonings and bring to a boil. Lower heat to summer for 30 minutes. Add chicken pieces and cook until chicken and sweet potatoes are fully cooked. Adjust seasoning as needed.
