Light and healthy chicken salad recipe

Avocado Chicken Salad

If you eat dairy-free, leave out the yogurt and mayonnaise and just use the avocado to coat the salad. You may need to add one or two more than the recipe calls for to blend in and add moisture. As a mom, I’m loving this healthy dish and my children enjoy it too!

Avocado Chicken Salad

2 cups shredded cooked chicken, fresh or canned
1 ripe avocado (or more for dairy-free option)
½ teaspoon Lime or lemon juice
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
¼ cup Greek yogurt
¼ cup light mayonnaise
1/3 cup Grapes, chopped (optional)
1/3 cup Celery, chopped (optional)

Place the shredded chicken in a large bowl for mixing.

In a separate bowl, mash the avocado until it is smooth. Mix it with the shredded chicken, lemon or lime juice and spices, then add grapes and celery if desired.

Add the Greek yogurt and mayonnaise and mix well. If you’re making your recipe dairy-free, leave these out and add more avocado instead.
