- 5 large potatoes, diced
- ½ cup low-fat milk
- 3 tablespoons butter
- Salt and pepper to taste
- ½ cup white cheddar cheese, grated
- Yellow onions, carrots, celery, mushrooms, peppers, zucchini, squash or whatever vegetables you have on hand to equal 1½ quarts, chopped
Preheat oven to 350 degrees. Boil potatoes until soft, and mash with milk and butter. Season with salt and pepper. In a sauté pan, cook vegetables until they begin to brown. Season with salt and pepper, and cook until they are softened. Put vegetables in the bottom of a greased casserole dish and top with mashed potatoes and grated cheese. Brown in oven and serve.
