Instant Pot Pesto Quinoa and Veggies
Makes 6 servings
Prep time: 5 minutes Cook time: 15 minutes
1 red bell pepper, diced
½ red onion, diced
1½ cups uncooked quinoa
½ teaspoon salt
½ teaspoon black pepper
4 cups fresh spinach
2 cups low-sodium chicken broth, or any other broth
2 red tomatoes, diced
1/3 cup prepared pesto sauce
Feta cheese and sliced almonds to garnish
Combine bell pepper, onion, quinoa, salt, pepper, spinach and broth in an Instant Pot. Cook on the rice setting or for 8 minutes on the manual setting. Use the manual release when done. Add the tomatoes and pesto. Mix well. Serve warm or cold garnished with feta cheese and sliced almonds.
