Fiesta rice and beans shaker recipe

Pair this delectable dish with fresh greens for a taco-style salad!

Fiesta Rice and Beans Shaker

Serves 10

12 ounces brown rice, dry

2 ½ cups water

2 ½ cups corn, frozen

2 ½ cups salsa, canned

5 cups black beans, canned, drained

3 ½ tablespoons taco seasoning

10 ounces corn tortilla chips, crushed

Salad dressing

2 ½ cups salsa, canned

¼ cup ranch dressing, dairy-free

Optional garnishes

Black olives

Jalapeños

Onions

Prepare the rice and cool completely. Combine corn, black beans, salsa and taco seasoning in a bowl. Prepare the salad dressing by combining the salsa and dairy-free ranch. Layer ingredients into a bowl or pan in this order:

  1. Bean and corn mixture
  2. Chopped romaine lettuce
  3. Optional garnishes: black olives, jalapeños, onions
  4. Crushed tortilla chips

Drizzle salsa ranch over the chips or serve the dressing on the side.
