Roasted Butternut Squash

  • Makes 6 servings
  • 1 large butternut squash, peeled, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Heat oven to 400 degrees F. In a large bowl, toss the butternut squash cubes with olive oil and seasonings. Arrange coated squash on a baking sheet.
  • Bake until tender and lightly browned, 25 to 30 minutes.
