Easy, healthy side for Thanksgiving dinner

Roasted Butternut Squash
- Makes 6 servings
- 1 large butternut squash, peeled, cut into 1-inch cubes
- 3 tablespoons olive oil
- Salt and pepper to taste
- Heat oven to 400 degrees F. In a large bowl, toss the butternut squash cubes with olive oil and seasonings. Arrange coated squash on a baking sheet.
- Bake until tender and lightly browned, 25 to 30 minutes.
