Roasted Parmesan Broccoli
Makes 6 servings
Prep time: 10 minutes
Cook time: 20 minutes
2 bunches fresh broccoli
2 tablespoons garlic, minced
2 tablespoons lemon juice
1/3 cup olive oil (1½ tablespoons set aside)
Salt and pepper to taste
1/3 cup shredded Parmesan cheese
2 tablespoons dried basil
Heat the oven to 400 degrees F.
Cut the broccoli florets from the stalk (discard stalks) and cut the florets in half. Lay them flat on a baking sheet.
Mix the garlic and all but 1½ tablespoons of the olive oil, and drizzle on the broccoli. Salt and pepper to taste.
Bake for 20 minutes or until some of the broccoli tips are browned.
Toss the hot broccoli in 1½tablespoons olive oil, lemon juice, Parmesan and basil. Serve warm.
