Can you believe the holiday season is just around the corner? During this time of celebration we are always searching for healthier holiday alternatives. This throw-together recipe is a crowd-pleasing substitute for your traditional cold pasta salad.

Not only is this high-fiber dish packed with flavor, it makes for a beautiful addition to your holiday table. The vibrant colors match the array of vitamins and nutrients your guests can enjoy at your holiday celebration.

Sweet corn salad with feta, tomato and green beans

10 ounces frozen sweet corn, thawed

10 ounces frozen cut green beans, thawed

1 pint cherry tomatoes, halved

2 tablespoons dried basil

4 ounces reduced-fat feta cheese, crumbled

3 tablespoons extra virgin olive oil

1 tablespoon lemon juice

Black pepper to taste

Set aside.

Combine corn, green beans, tomatoes, basil and feta cheese in a large bowl. Whisk the olive oil and lemon juice in a small bowl until combined, and add it to the veggies. Season with pepper and gently stir until all the ingredients are incorporated and coated in the dressing. Serve chilled.
