Remember when you were a kid and your mom would hit your favorite drive-thru for one of those artificial green but oh-so-yummy shamrock shakes? Save the fat and calories with this guilt-free, grown-up version (although kids will love it too!) of the classic shamrock shake.
Ingredients 5 baby spinach leaves 1 cup unsweetened vanilla almond, cashew or coconut milk 2 tablespoons maple syrup ½ teaspoon peppermint extract 1 cup ice
Garnish About 10 mini chocolate chips 1 sprig fresh mint
Process all ingredients but the garnish in a food processor or in a blender on the smoothie or purée setting. Pour into a glass and top with chocolate chips and mint. Happy St. Patrick’s Day to you!
