As the cold weather moves in, so do our cravings for warm, delicious, home-style meals. Prepare yourself for these winter cravings by planning hearty casserole dishes, crockpot meals and homemade soups. Look for healthy twists on old favorites. Here is a modified version of that store-bought handy hamburger mix. Whole-wheat noodles, lean beef, reduced-fat cheese and lower sodium make for a much healthier meal!
Cheeseburger Pie Serves 8
Ingredients
2 cups whole-wheat elbow pasta, dry
1 tablespoon olive oil
1 pound lean ground beef (look for local, grass-fed options when available)
1 small yellow onion, diced
2 tablespoons tomato paste
6 tablespoons ketchup, divided (look for natural, no high fructose corn syrup option when available)
2 tablespoons sweet relish
2 tablespoons yellow mustard
3 large eggs, whisked
1 cup reduced-fat cheddar cheese, shredded
½ cup reduced-fat mozzarella cheese, shredded
½ teaspoon salt
Nonstick pan spray
Heat oven to 350 degrees. Cook noodles according to package directions.
In a large skillet over medium heat, brown the ground beef. Stir in onion and cook until softened, about 5 minutes. Remove mixture from heat and pour into a large bowl. Mix in 2 tablespoons ketchup, relish and mustard, then set aside.
In a large mixing bowl, mix remaining ketchup, eggs, ½ cup cheddar, all of the mozzarella and salt. Add in the pasta and toss to coat.
Spray a 9-inch pie pan with nonstick spray. Pour half the pasta mixture in. Add ground beef mixture. Top with remaining pasta. Sprinkle remaining cheddar cheese on top.
Bake for 30 minutes or until pie is sizzling around the edges and top is golden brown.
