Cannoli Cream-filled Strawberries

Makes 4 servings

8 large strawberries, halved

½ cup low-fat ricotta cheese

½ tablespoon powdered sugar

½ teaspoon vanilla extract

Optional toppings

  • Mini semi-sweet chocolate chips
  • Lemon zest
  • Orange zest
  • Fresh mint

Directions

Mix the ricotta and vanilla until combined in a medium bowl.

Slowly add in the powdered sugar. Spoon the mixture into a large zip-close bag or pastry bag fitted with a large tip.

Wash the strawberries with vegetable wash and pat dry. Cut the strawberries in half and remove the stem.

If using a zip-close bag, cut off one corner to pipe the cannoli cream onto the strawberries. Otherwise use a pastry bag to pipe.

Garnish with any of the optional toppings.

Refrigerate until ready to serve.
