Rainbow Wraps With White Bean Hummus

Serves 5

Wraps:

½ cup carrots, shredded

½ cup radishes, sliced

½ cup spinach, chopped

½ cup zucchini, shredded

5 tortillas

Hummus:

22 ounces (2.5 cups) cannellini beans, canned, drained and rinsed

½ teaspoon onion powder

1 teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon pepper

2 teaspoons parsley, dried

2 teaspoons basil, dried

Juice from 1 lemon

½ teaspoon hot sauce

1/8 cup olive oil

¼ cup water or chickpea brine

To make the hummus, add the beans, onion powder, garlic powder, salt, pepper, parsley, basil, lemon juice, hot sauce, water/chickpea brine and oil to a food processor. Process until smooth. Scoop ½ cup of hummus onto each tortilla and spread evenly. Divide the vegetable options among the five tortillas. Roll each filled tortilla widthwise and, using a serrated knife, cut each wrap into 1-inch slices for pinwheels.
