Hearty breakfast burritos

We all need a little motivation to get moving in the morning. Enter breakfast! How does warm sausage, egg and ooey, gooey cheese sound? Skip the fast food drive-thru and make a heart-healthy breakfast burrito yourself with a few simple substitutions.

Use MorningStar Farms Hot & Spicy Sausage Patties (or another brand of nonmeat breakfast sausage) instead of high-fat, high-sodium breakfast sausage. Use low-fat shredded cheese to reduce fat and cholesterol even more.

High in protein and a good source of fiber, these make-ahead breakfast burritos make for an easy morning and a great start to the day!

Savory breakfast burritos

Serves 6

6 8-inch multigrain, whole grain or whole-wheat flour tortillas

3 hot and spicy veggie sausage patties (we use MorningStar Farms)

½ small onion, diced

¾ red bell pepper, diced

4 eggs + 2 egg whites, whisked

1 cup reduced-fat Mexican cheese blend, shredded

Nonstick spray

Wax paper

Spray a large pan with nonstick spray to coat. Place sausage patties in the pan and crumble with a fork or spatula as you cook. Once the sausage is heated through, add the diced veggies and sauté until soft.  Add in the whisked eggs and cook through.

Place the egg mixture into a paper towel-lined bowel and squeeze out the excess moisture. On your countertop, lay out the eight tortillas. Evenly divide the egg mixture onto each tortilla. Top evenly with the shredded cheese, then fold each tortilla into a burrito.

You can enjoy your burrito right away or freeze and use as needed throughout the week.

To prepare for freezing, line up six squares of wax paper. Place a burrito on each piece of paper, and wrap the wax paper around the burrito; tape it closed. Place the date on each burrito and freeze immediately.

To reheat after freezing, unwrap the burrito from the wax paper and wrap in a paper towel. Microwave on one side for 1 minute. Flip and microwave for another minute. Try with a little salsa, and enjoy!
