Makes eight 4-ounce servings

1 cup potatoes, peeled

½ cup carrots

3 tablespoons extra virgin olive oil

¼ cup water

1½ teaspoons lemon juice

¼ cup nutritional yeast

½ teaspoon salt

¼ teaspoon onion powder

Cayenne pepper to taste

Boil the potatoes and carrots until tender; about 20 minutes. When done, drain and reserve the liquid. Put all ingredients in a blender, and blend until smooth. If the mixture is too thick, add a little of the reserved liquid. Serve with your favorite raw veggies or pita chips.
