Daniel Plan: BBQ Chicken Pizza Recipe

BBQ Chicken Pizza

Makes one 12-inch pizza

1 whole-wheat pizza crust

¾ pound organic chicken breasts (look for locally sourced meat products)

18 ounces barbecue sauce (look for one with no high fructose corn syrup or make your own)

½ white onion, diced

2 teaspoons garlic, minced

½ red onion, diced

¾ cup pineapple, crushed or chunks (canned in its own juices, no added syrup)

¾ cup mozzarella cheese, shredded

Place chicken (can be frozen) in a crockpot and top with white onion, barbecue sauce and garlic. Cook on high for 4 hours, or low for 6 to 8 hours, until chicken is cooked through. Shred the chicken.

Heat the oven according to the pizza crust directions. Layer the chicken, cheese, red onion and pineapple on the crust. Bake for 10 minutes or until the top is golden brown.

For added flavor, serve with Daniel Plan-friendly homemade ranch dressing.
